Sexy-Ass Meatloaf
Equipment
- 1 Loaf Pan
- 1 Mixing bowl
- 1 Sheet Tray
- 1 Wire Rack
- Asst Spoons/Spatulas
Ingredients
- 1 # Ground Beef
- 1 # Italian Sausage
- 2 large Eggs
- 8-10 Slices Bacon
- 1/2 Cup Bread Crumbs
- 1 Tbsp Oregano
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1 Tbsp Dijon Mustard
- 1/4 Cup Ketchup
- 1 Tbsp Worcestershire
- 1/2 Cup Onion diced
- 1/4 Cup Celery diced
- 1/4 Cup Green Pepper diced
- 2 cloves Garlic minced
Instructions
- Set oven to 375. Line loaf pan with bacon strips and set aside.
- Sauté diced onion, pepper, celery, and garlic and set aside to cool.
- In a large mixing bowl add ground beef, Italian sausage, eggs, and the rest of the ingredients. Mix well.
- When cool add sauteed vegetables to the meat mixture and mix well.
- Press meat mixture into the bacon lined loaf pan creating a small channel in the middle to give it space to rise.
- Bake for 25 minutes.
- When the meatloaf starts to pull from the sides of the pan and you can see the grease building up, pull from the oven and carefully drain grease out of the loaf pan into a safe receptacle. Place the wire rack into the sheet tray and turn the meatloaf out onto the wire rack with the bacon lined bottom now facing up.
- Place sheet tray with meatloaf back in the oven and bake for another 20 minutes or until the internal temperature reaches 165 °F
- Remove from oven and let rest 10 minutes. Slice and serve with you your favorite sides and sauce.

Meatloaf often gets a bad rap from popular media and that translates to peoples opinions of something that is actually a fantastic meal. The grimaces that grace peoples faces when I mention meatloaf are too often the result of dry, flavorless, loaf slathered in ketchup that hasn’t changed from the 1950’s frozen dinner stereotype.
